Buying dressed chicken in Bangladesh

Dressed chicken is a bird that has been bled, plucked and eviscerated, sold whole or cut, chilled or frozen. Hotels, restaurants, fast-food kitchens, caterers and food processors in Bangladesh buy it because it arrives ready to cook. The 2020 sector study found only 2 to 3 per cent of broilers passed through slaughter plants, all of them owned by integrators.

Few plants, a thin cold chain and frequent power cuts make the plant and the cold room the real questions. As a dressed chicken supplier in Bangladesh, Roptan sources from verified plants, checks the slaughter licence, the food safety and halal papers and the temperature logs, and delivers in a refrigerated vehicle to your kitchen.

Kinds of dressed chicken

Whole chilled birds

Kept cold but not frozen, for kitchens that cook within days. Choose them where you have cold storage and a delivery schedule to match your use.

Whole frozen birds

Frozen after dressing, for buyers who hold stock. Choose them for a store or a site away from the plant, and agree how the weight was measured.

Cut parts

Breast, boneless or bone-in, tenderloin, thigh, drumstick, wing or leg quarter. Choose cuts for menus and processing that use one part, and send your cut list.

Giblets, bones and frames

Heart, gizzard, liver and neck, packed apart, and bones or frames, which many Asian kitchens buy for soup. Choose them for stock and curry kitchens.

How to specify a dressed chicken order

Whole bird presentation
With giblets, without giblets, or partially eviscerated: the three presentations in the EU reference rule. Name one, with head and feet on or off.
Cut list and pack
Each cut, bone-in or boneless, the pack weight, the carton weight and the label you need.
Weight
A dressed weight range per bird or per pack, taken from the plant. Live broilers usually sell at about 1.5 to 1.7 kg, so dressed birds weigh less.
Chilled or frozen
As an EU reference, frozen poultry is held at minus 12 °C or colder throughout, with brief rises of no more than 3 °C. State your own limit.
Added water
Chilling in water adds weight. The EU reference rule limits it by a drip test; if you pay by weight, ask the plant how it controls water uptake.
Date and shelf life
The production date on each carton. Frozen storage is usually limited to about 12 months for whole birds, 9 for parts and 3 to 4 for giblets.

Laws, certificates and references for dressed chicken

Animal Slaughter and Meat Quality Control Act 2011 and Rules 2021
Commercial slaughter needs authorisation under the Act. Ask the plant to show its authorisation under the Act and the Rules.
Bangladesh Food Safety Authority, HACCP or ISO 22000
The Bangladesh Food Safety Authority (BFSA) works under the Food Safety Act 2013. Ask the plant for HACCP or ISO 22000 papers, and read the certificate's scope.
Halal Certification Policy 2023
Halal certificates in Bangladesh are usually issued by the Islamic Foundation under this policy, which covers food products and has a section on the halal method of slaughter.
Codex Code of Hygienic Practice for Meat, CAC/RCP 58-2005
The international hygiene code, covering inspection of poultry before and after slaughter. A useful reference when you visit a plant.

What moves the price of dressed chicken

  • The live bird: feed, chick cost and losses on the farm.
  • Processing and the cold chain, with few plants in the country.
  • Cuts and boning, and the yield of each cut from the bird.
  • Frozen or chilled, and how long the stock is held.
  • Pack size, labelling and distance in a refrigerated vehicle.

Lead times and delivery

No standard lead time applies. Plants draw birds from integrator and contract farms on a cycle of usually 30 to 35 days, so a large regular order is usually planned about five weeks ahead. A new cut list, a custom pack or a halal certificate in your name can add time. Roptan confirms the dates and any minimum in the quote.

We deliver inside Bangladesh in a refrigerated vehicle, with cartons labelled by product and production date. The temperature is checked on arrival and the reading written on the delivery note; a carton above the agreed limit is refused. You receive the delivery note, the plant's halal certificate, lab reports where agreed and a VAT invoice (Mushak 6.3).

What we check for this order

  • Plant authorisation and papersWe check the plant's slaughter authorisation and its food safety and halal certificates before the first order.
  • Cold room and powerWe read the cold room and vehicle temperature logs and ask what keeps the cold room running in a power cut.
  • Lot testsWe ask for lab results on the lot for bacteria such as Salmonella and for antibiotic residues.
  • Temperature and labels on arrivalWe check the temperature, the production date and the pack weights against your order.

Questions buyers ask

Should I buy chilled or frozen dressed chicken?

Chilled suits a kitchen that cooks within days and takes frequent deliveries. Frozen suits buyers who hold stock or sit far from a plant. As an EU reference, frozen poultry should stay at minus 12 °C or colder at all points. Many Bangladeshi consumers distrust frozen meat because they cannot see its date, so label every carton.

How long can frozen chicken be stored?

Usually up to about 12 months for uncooked whole birds, 9 months for parts and 3 to 4 months for giblets, as commonly recommended. That assumes a steady freezer. Ask for the production date on every carton and set your own limit on how old stock may be when it reaches you.

Why is dressed chicken hard to source in Bangladesh?

Most chicken is bought live and slaughtered at the market. The 2020 sector study found only 2 to 3 per cent of broilers went through slaughter plants, all owned by integrators, with no independent processors. So supply comes from a few plants, and we check each one before your first order.

How do I know I am not paying for water?

Ask how the plant chills the birds and how it controls water uptake. The EU reference rule limits water in frozen poultry by a drip test, because water taken up in chilling adds weight. We check pack weights on arrival and can ask for a thawed weight check on a sample.

How soon will I hear back about eggs and poultry?

Within 48 hours of a complete requirement, with a price and a delivery date. A requirement is complete when it has the quantity, where it is needed and by when.
