If we use RAID, do we still need backups?

Yes. RAID keeps the server running when a drive fails, but it is not a backup: a deleted or corrupted file is gone from every drive at once. Keep a separate backup, on a NAS or off site.

Should we buy a NAS or a SAN?

A NAS if staff mainly share files: it serves folders over the network and is simple to run. A SAN if several servers or virtual machine hosts need block-level storage, which needs a dedicated storage network and more skill to manage.

How long should a server UPS run?
