Buying potato chips in Bangladesh

Potato chips are thin slices of potato, or a thin layer of potato paste, fried, baked or air-fried until crunchy, then salted or seasoned. Bangladesh grew more than 10 million tonnes of potatoes in 2023, but chip-grade lots must be chosen for low reducing sugar. Distributors, shops and caterers buy chips for the home market.

Much of the work happens before the fryer: controlling reducing sugar in the potato is the industry's main lever on acrylamide. A potato chip manufacturer in Bangladesh also needs a BSTI licence for the product. Roptan sources from verified, licensed plants, asks for the potato lot's sugar result and fryer settings, and has the finished chips tested.

Kinds of potato chip

Sliced chips

Thin slices of fresh potato, usually fried in a continuous line. Raw potato quality and slice thickness drive their acrylamide. Choose them for classic salted and flavoured packs.

Kettle chips

Fried in batches, the older way, from thicker slices with the surface starch left on, which gives a hard-bite chip. Choose them for a thicker, harder crunch.

Dough-based chips

Shaped from a potato paste or dough, then fried or oven-baked. The EU treats them as a separate group for acrylamide, and in Bangladesh the seller's BSTI licence decides which line covers them.

Baked chips

Oven-baked rather than fried and marketed as a lower-fat option, so they need their own fat and moisture targets. Choose them when the label must carry less fat.

How to brief a potato chip manufacturer in Bangladesh

Base and route
Sliced or dough-based, fried or baked, batch or continuous, written into the order with a signed reference sample.
Potato lot
The variety, the storage temperature and the reducing sugar result for the lot going into your chips.
Slice thickness
In millimetres with a tolerance. Thicker slices need more heat or time to reach the same moisture, which raises the acrylamide risk.
Fryer settings and moisture
Industry guidance typically keeps the fryer exit at or below 168 °C for sliced chips and the end-of-process temperature at or below 175 °C for dough-based ones, with finished moisture not below 1.0 per cent.
Fat, salt and oil
A fat and a salt maximum per 100 g, the frying oil and how often it is changed. Running the fryer cooler can raise fat uptake.
Pack
Nitrogen-flushed film, a residual oxygen figure, a seal test and a shelf-life test at tropical temperature.

Licences, rules and tests for potato chips

BDS 1927:2017, Potato Chips
BSTI's mandatory line for potato chips. Chips and Crackers, BDS 1556:2017, is a separate line, so for a dough-based chip the seller's licence decides.
Regulation (EU) 2017/2158
Requires food businesses selling in the EU to apply acrylamide mitigation and sample their output. It sets benchmark levels for potato crisps, not legal limits.
Trans fat, S.R.O. 332-Law/2021
Since 31 December 2022, foods and fats in Bangladesh may carry no more than 2 g of industrial trans fat per 100 g of total fat. Ask for a result.
Labels
The Packaged Food Labelling Regulations 2017 are in force; BFSA's 2026 rule is still a draft. Seasonings can bring milk, wheat or soy onto the allergen list.

What moves the price of potato chips

  • Potatoes: chip-grade lots are chosen for low reducing sugar, which narrows the share of the crop that suits a plant.
  • Frying oil and fat uptake: palm oil prices and how much oil the chips absorb move the cost.
  • Route: kettle batches, continuous lines, dough-based and baked chips usually price differently.
  • Seasoning and pack: flavours, nitrogen flushing and printed film add cost over plain salted chips.
  • Testing: acrylamide results for EU buyers add a lab test per lot.

Lead times and delivery

Time depends on the potatoes and on what is new. Potatoes stored cold need a few weeks of reconditioning before frying, a new flavour needs trial runs and a signed sample, and private label adds printed film. EU orders add acrylamide testing. Roptan confirms the dates and the minimum in the quote.

Roptan delivers chips anywhere in Bangladesh by the carton, with batch codes, the lab reports you ordered and a VAT invoice (Mushak 6.3). Nitrogen keeps the bags from collapsing and cushions the chips, but cartons still ride on top of heavier goods.

Buying potato chips for export

In the UK tariff, thin potato slices fried or baked in airtight packs sit under subheading 2005 20; your broker confirms the code for your market. EU importers usually ask for acrylamide results. US importers verify suppliers under the FDA's FSVP rule, and the FDA has issued a 2016 guidance for industry on reducing acrylamide. Roptan quotes FOB Chattogram.

What we check for this order

  • Potato lotWe ask for the variety, storage temperature and reducing sugar result of the lot going into your order.
  • Fryer and moistureOn a visit we note the fryer exit temperature and the finished moisture against your specification.
  • Lab resultsAn accredited lab tests fat, salt and trans fat, plus acrylamide for EU-bound lots.
  • Bags and breakageWe check nitrogen flush, seals, net weight and broken chips in bags from the run against the sample.

Questions buyers ask

Do chips for the EU need an acrylamide test?

Usually, yes. Regulation (EU) 2017/2158 has applied since April 2018 and requires food businesses to apply mitigation measures and sample their output. Potato crisps, sliced or dough-based, carry a benchmark of 750 micrograms per kg. It is not a legal limit, but importers usually work to it.

Which potatoes make good chips?

Mature potatoes from lots chosen for low reducing sugar. Storage matters too: keep them above 6 °C, and recondition cold-stored potatoes at a higher temperature for a few weeks before frying. Ask for the variety and the lot's sugar result.

Why are kettle chips harder than ordinary chips?

Kettle chips are fried in batches from thicker slices with the surface starch left on, which gives the hard bite. Ordinary chips are usually rinsed and run through a continuous fryer. Thicker slices need more heat to dry, so watch acrylamide on kettle lines too.

Which BSTI licence does a dough-based chip need?

BSTI lists Potato Chips (BDS 1927:2017) and Chips and Crackers (BDS 1556:2017) as separate mandatory lines, and which one covers a dough-based chip is not settled. The seller's licence decides, so ask for its number and check that it names your product.
