Buying jaggery (gur) in Bangladesh

Jaggery, called gur in Bangladesh, is unrefined sugar boiled down from sugarcane juice or date palm (khejur) sap without separating the crystals from the molasses. It is sold as solid cakes and blocks or as a liquid. Sweet makers, bakeries, distributors and food processors buy it in bulk.

Gur is a trade with known adulteration problems, from bleaching agents to added sugar and non-food colours. A jaggery (gur) manufacturer in Bangladesh should therefore be held to a written specification and a lab test. Roptan sources from verified makers, states the source and limits in the order, tests a sample from your lot and checks the trace record.

Kinds of gur

Sugarcane gur

Boiled down from cane juice in large pans and set in blocks or cakes, golden to dark brown. Choose it for sweets, baking and cooking where date palm flavour is not needed.

Date palm gur

Boiled from khejur sap, made only in winter, and can be very dark. Choose it for seasonal sweets and buyers who ask for its flavour, and book before the season starts.

Patali (solid gur)

Gur set as cakes, bricks or blocks of fixed weight. Choose it for retail packs and easy handling, and state the piece weight and how it is wrapped.

Liquid gur (jhola)

Boiled sap or juice kept as a thick syrup. Choose it for sweets and food processing. Bangladeshi usage often calls it molasses, which is not the refinery molasses of HS 1703.

How to brief a gur maker

Source
Cane juice or date palm sap, and the district. Ask where the cane or sap came from, since imported gur has reportedly been melted and resold as local.
Form and pack
Patali cakes, blocks or liquid, with piece or container weight, and airtight packs for the liquid.
Colour
A range set by a reference sample and a lab colour reading, not by words. Dark gur is often unclarified; a pale gold can come from clarifying or from added colour.
Composition
Minimum sucrose, maximum moisture and an invert sugar range, tested on your lot. Published typical values disagree, so do not rely on them.
No additions
No hydrose or other bleach, no added sugar or fat and no non-food colours, written into the order.
Process aids
Lime to lift froth and a little food-grade mustard or castor oil to stop boil-over are normal. Ask the maker to name them.
Sap handling
For date palm gur, how sap is collected, whether pots are covered, and how soon it is boiled, since fresh sap ferments if it is not boiled soon after collection.

Standards, enforcement and papers for gur

BSTI gur standard, 2025
Announced on 15 July 2025 with a sulphur dioxide limit of 70 ppm, three recommended microbiological tests and testing at land ports; BSTI suspended enforcement on 17 September 2025 for two months. Its status since is unknown, so confirm with BSTI.
Safe Food Act 2013
Mobile courts have fined gur makers under it for hydrose, non-food colours and added sugar. Ask for the maker's hygiene record and any past findings.
EU sulphite declaration
Under Regulation (EU) No 1169/2011, sulphur dioxide and sulphites above 10 mg/kg must be declared as an allergen, a relevant point for any gur sent to the EU.
Non-centrifugal sugar
The formal name the FAO and the World Customs Organization recognise for jaggery-type sugars. Use it beside gur on technical papers.

What moves the price of gur

  • Raw material: date palm sap is seasonal and tied to winter, while cane gur is made in the crushing months.
  • Colour and clarification grade, set against a reference sample, and how many lots meet it.
  • Form and pack: patali cakes, blocks or liquid, and airtight packs for liquid gur.
  • Testing: a lab test for sulphur dioxide and adulterants adds cost, but low-grade gur in the market makes it worth paying for.

Lead times and delivery

Date palm gur is made only in winter, so book it before the season; the maker confirms the dates for its district. Cane gur follows the crushing season. Time also depends on the quantity, the form and pack, and how long the lab test takes. Roptan confirms the dates and the minimum order in the quote.

Inside Bangladesh we deliver to sweet makers, bakeries, distributors and processors by the carton, sack or container, with the lab report for your lot, the trace record and a VAT invoice (Mushak 6.3). Liquid gur travels in sealed, food-grade containers. If the lot does not match the tested sample, we take it up with the maker.

What we check for this order

  • Sulphur dioxide by labWe have your lot tested for sulphur dioxide against the limit you set, since BSTI's 70 ppm figure is not confirmed in force.
  • AdulterantsWe check the report for added sugar, fat, hydrose and non-food colours, the additions named in recent enforcement cases.
  • Trace recordWe check where the cane or sap came from, so melted and resold imported gur does not reach you as local.
  • Sample from your lotWe draw the sample from your lot, not one the maker picks, and check colour against the reference and the packs for damage.

Questions buyers ask

Is gur the same as molasses?

Not in trade papers. In Bangladeshi usage, molasses often means liquid or semi-liquid gur. In customs and refining, molasses (HS 1703) is the by-product left after sugar is extracted or refined, which is a different product. Write the meaning you intend into the order and the quote.

Is pale gur better quality?

Not always. Gur ranges from golden to dark brown, and dark gur is often simply unclarified. A pale colour can come from careful clarifying, from hydrose used as a bleach, or from added colour. Specify untreated gur, set the colour by a reference sample, and have the lot tested.

Is BSTI's gur standard in force?

We cannot confirm it. BSTI announced a gur standard on 15 July 2025, with a 70 ppm sulphur dioxide limit, three recommended microbiological tests and testing at land ports, then suspended enforcement on 17 September 2025 for two months. We found no later status, so ask BSTI and set your own limits.

Is date palm gur linked to Nipah virus?

The evidence links Nipah to drinking raw date palm sap, not to boiled gur. The study advice is to avoid raw sap and to keep bats away from taps and collection pots. Ask the maker how pots are protected, how sap is collected and how soon it is boiled.
